Cask keeper Recent Press Navarro Kitchen

Gewürztraminer is Navarro's most popular variety. When it rained before and during bloom in 2005 we started to worry and by August we panicked. None of our Anderson Valley neighbors had any to spare since they had experienced the same lousy set. We phoned growers in Sonoma and Santa Barbara to see if they could help. We wanted enough Gewürztraminer to keep our customers in high spirits but we also wanted enough juice to keep our oak casks full and healthy. We ferment and age Gewürz in 1500 gallon oak ovals and by the time just one cask is shipped from France it costs as much as a new family car. These big oak ovals can be used for many years but left empty for one vintage they can spoil forever. Fortunately we didn't have to fill them monthly with water since we found some delicious coastal fruit which kept our casks wet and seasoned. Gold Medal winner and Best of Class.

It ain't cheap to have an oak oval sent from France to Philo. We had to send one back and forth a second time for repairs when it developed a premature crack. With our 2005 crop at a record low it seemed an opportune time for repairs.
